The most important first step of the process is sourcing the local hormone- free Jersey whole milk. Then the curd is stretched to order and packaged every day for freshness. The rind-less porcelain white rounds are milky, moist, and soft with a delicate elasticity.

It melts beautifully on a pizza or in a pasta dish, and makes for a delightful creamy surprise in an aranchini ball. Pairing fresh mozzarella with a dry white wine like Pinot Grigio or Sauvignon Blanc makes for a perfect match, as does a yeasty wheat or pilsner beer.
